The State Street Farmers Market is pleased to be hosting its first ever live cooking demonstration, featuring fresh, seasonal ingredients from our vendors. Executive Chef Brad Thomas, from The Compass Restaurant, will be preparing Roasted Japanese Eggpant with Tzatziki Sauce.
A Little About Chef Brad Thomas
Chef Thomas received his culinary degree in 1998 in Rhode Island and began his professional career at the young age of 21. Chef Thomas was given an opportunity to work directly under Chef Norman Van Aken, a James Beard award winning chef in 2004.
In 2007, after spending time cooking in the world of private aviation as well as catering, Chef Thomas joined the competition barbeque circuit where he won “Rookie of the Year," multiple grand championships, and was always in the top 10 in California competitions. Chef Thomas’ best year found him ranked number 3 in the nation among over 5,000 other competitors. He then became a certified CBBQA judge after an illustrious career in over 60 competitions and in 2011 opened Brazen BBQ with a fellow competitor. In 2014, wanting to get back to his roots of creating innovative dishes in a sustainable fashion, he gave up his position of Executive Chef/Pitmaster at Brazen BBQ and joined The Compass in Carlsbad Village.
Cooking Demo Details - Wednesday, April 5th
Chef Thomas will host demos at the top of the hour at 3pm, 4pm, 5pm, and 6 pm at the north end of the farmers market (Grand Ave. & State St. intersection) beneath The Compass canopy. Each demonstration will be approximately 10 minutes. This will be a standing room only demonstration. Come for the take-home recipe and stay for the delicious samples!
